Sweet and Sour Red Cabbage

Ingredients:
1 pound red cabbage 1 tart apple 1 tbsp. unsalted butter 1 tbsp. brown sugar 1/4 cup minced red onion 2 tbsp. red wine vinegar 1/4 cup beef or chicken stock 1 tsp. sea salt 1/4 cup red currant jelly
Instructions:
1) Wash, dry and shred the cabbage 2) Chop the apple 3) Melt the butter in a large pot and stir in the brown sugar 4) Add the apple and onions, cover and cook over a low heat for 4 - 5 minutes until wilted. 5) Stir in the cabbage, add the vinegar, cover and braise for 10 minutes. 6) Pour in the broth and cook, covered over a low heat for 2 hours or bake in a 300F oven for 2 hours. 7) Stir in jelly just before serving
